The brittleness in the plastic door panels is caused by age and sunlight. The sunlight leaches the oils and solvents from the plastic there is nothing on the market that I'm aware of to restore them. You can achieve satisfactory results at refurbishing the panels by thoroughly cleaning them with a Quality cleaner designed for vinyls, drying them thoroughly, then using a vinyl primer and vinyl color coat to match or change the interior. I have done this on old panels in an '81 Chevy pickup. If you have gouges in the panels, these can be repaired with a catalyzed body filler, I prefer Evercoat Euro-soft, follow directions on the can then finish to your taste then prep and paint as above. It worked for me as I had to modify some panels for my truck.

but that doesn't address the brittle problem?

I want to refurbish the originals, rather than scrapping them for LMC versions. they are sun faded and the plastic is brittle, meaning you can scratch it with your fingernails. Obviously the top is worse than the bottom, but I have seen spray paint options, etc. but nothing to address the brittleness and current scratches in the plastic.
